There are a great many mushrooms growing in the Languedoc-Roussillon.   Cèpes and giroles mushrooms are traditionally sliced into small strips and browned in olive oil with garlic and parsley.   The most famous and coveted is of course the truffle, widely harvested and now even cultivated.
